Easy Crustless Veggie Quiche (6 servings)

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 1 cup sliced mushrooms
  • 1 cup chopped bell pepper
  • 1 cup fresh spinach, roughly chopped
  • 6 large eggs
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion, mushrooms, and bell pepper. Cook for 5–7 minutes, until softened.
  3. Add spinach and cook for another 1–2 minutes, until wilted. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and Italian seasoning.
  5. Spread the cooked vegetables evenly in the prepared baking dish. Sprinkle the shredded cheddar over the vegetables.
  6. Pour the egg mixture evenly over everything.
  7. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
  8. Let the quiche rest for 5–10 minutes before slicing into 6 portions.

Serving Tip

Serve warm with a fresh green salad, sliced tomatoes, or fresh fruit. Leftovers can be refrigerated for up to 3–4 days and reheated gently in the microwave or oven.
