Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 1 cup sliced mushrooms
- 1 cup chopped bell pepper
- 1 cup fresh spinach, roughly chopped
- 6 large eggs
- ½ cup milk
- ½ cup shredded cheddar cheese
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon dried Italian seasoning
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking dish.
- Heat olive oil in a skillet over medium heat. Add onion, mushrooms, and bell pepper. Cook for 5–7 minutes, until softened.
- Add spinach and cook for another 1–2 minutes, until wilted. Remove from heat and let cool slightly.
- In a large bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and Italian seasoning.
- Spread the cooked vegetables evenly in the prepared baking dish. Sprinkle the shredded cheddar over the vegetables.
- Pour the egg mixture evenly over everything.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Let the quiche rest for 5–10 minutes before slicing into 6 portions.
Serving Tip
Serve warm with a fresh green salad, sliced tomatoes, or fresh fruit. Leftovers can be refrigerated for up to 3–4 days and reheated gently in the microwave or oven.
