Ingredients
For the Protein Fluff
- 1 cup low-fat cottage cheese
- ½ cup plain Greek yogurt
- 1 scoop vanilla protein powder
- 1 cup fresh strawberries, chopped
- 1–2 tablespoons honey or sugar-free sweetener, to taste
- 1 teaspoon vanilla extract
- 1 tablespoon instant sugar-free cheesecake pudding mix
For the Topping
- ½ cup fresh strawberries, sliced
- 2 tablespoons crushed graham crackers
- 2 tablespoons light whipped topping, optional
Instructions
- Add the cottage cheese, Greek yogurt, protein powder, strawberries, sweetener, vanilla extract, and cheesecake pudding mix to a blender.
- Blend for 1–2 minutes, scraping down the sides as needed, until completely smooth and creamy.
- Transfer the mixture to a bowl and refrigerate for 20–30 minutes to help it thicken.
- Spoon the strawberry cheesecake fluff into 4 small dessert cups.
- Top each cup with sliced strawberries, a little crushed graham cracker, and light whipped topping if desired.
- Refrigerate for another 30 minutes before serving for the best texture.
Storage
Keep covered in the refrigerator for up to 3 days. Add the graham cracker topping just before serving so it stays crunchy.
