Strawberry Cheesecake Protein Fluff Cups

Ingredients

For the Protein Fluff

  • 1 cup low-fat cottage cheese
  • ½ cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 cup fresh strawberries, chopped
  • 1–2 tablespoons honey or sugar-free sweetener, to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant sugar-free cheesecake pudding mix

For the Topping

  • ½ cup fresh strawberries, sliced
  • 2 tablespoons crushed graham crackers
  • 2 tablespoons light whipped topping, optional

Instructions

  1. Add the cottage cheese, Greek yogurt, protein powder, strawberries, sweetener, vanilla extract, and cheesecake pudding mix to a blender.
  2. Blend for 1–2 minutes, scraping down the sides as needed, until completely smooth and creamy.
  3. Transfer the mixture to a bowl and refrigerate for 20–30 minutes to help it thicken.
  4. Spoon the strawberry cheesecake fluff into 4 small dessert cups.
  5. Top each cup with sliced strawberries, a little crushed graham cracker, and light whipped topping if desired.
  6. Refrigerate for another 30 minutes before serving for the best texture.

Storage

Keep covered in the refrigerator for up to 3 days. Add the graham cracker topping just before serving so it stays crunchy.
