Marinated Cucumber, Tomato & Onion Salad

Ingredients

For the Salad

  • 2 large cucumbers, thinly sliced
  • 3 medium tomatoes, chopped
  • ½ medium red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (optional)

For the Marinade

  • ¼ cup olive oil
  • 3 tablespoons apple cider vinegar or white vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • 1 small garlic clove, minced

Instructions

  1. Prepare the vegetables: Wash and slice the cucumbers, chop the tomatoes, and thinly slice the red onion. Add everything to a large bowl.
  2. Make the marinade: In a small bowl, whisk together olive oil, vinegar, lemon juice, honey, salt, black pepper, oregano, and minced garlic until well combined.
  3. Combine: Pour the marinade over the vegetables. Add the parsley and dill.
  4. Toss: Gently toss everything together until the vegetables are evenly coated.
  5. Marinate: Cover and refrigerate for at least 30 minutes. For deeper flavor, let it marinate for 1–2 hours.
  6. Serve: Give the salad another gentle toss before serving. Spoon into a serving bowl and enjoy chilled.

💡 Tips

  • Use English cucumbers for a crispier salad with fewer seeds.
  • For extra crunch, add sliced bell peppers.
  • If making it several hours ahead, add the tomatoes closer to serving time.
  • Store leftovers in the refrigerator for up to 2 days.
