Air Fryer Blueberry Muffins. Soft
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/3 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries
Instructions:
- Preheat the Air Fryer: Preheat your air fryer to 320°F (160°C) for about 5 minutes. This ensures it’s at the right temperature when you put the muffins in.
- Prepare the Batter:
- In a mixing bowl, whisk together the flour, sugar, salt, and baking powder.
- In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the blueberries.
- Fill the Muffin Cups:
- Line your air fryer basket or muffin tin with liners.
- Fill each muffin cup about 2/3 full with the batter.
- Air Fry the Muffins:
- Place the muffin tray or basket into the preheated air fryer.
- Cook the muffins at 320°F (160°C) for about 12-15 minutes or until a toothpick inserted into the center comes out clean.
- Check on them periodically to ensure they’re not browning too quickly. If they are, you can cover them loosely with foil.
- Cool and Enjoy:
- Once done, carefully remove the muffins from the air fryer and let them cool in the muffin tin for a few minutes.
- Transfer the muffins to a wire rack to cool completely.
