Air Fryer Blueberry Muffins. Soft

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 320°F (160°C) for about 5 minutes. This ensures it’s at the right temperature when you put the muffins in.
  2. Prepare the Batter:
    • In a mixing bowl, whisk together the flour, sugar, salt, and baking powder.
    • In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
    • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
    • Gently fold in the blueberries.
  3. Fill the Muffin Cups:
    • Line your air fryer basket or muffin tin with liners.
    • Fill each muffin cup about 2/3 full with the batter.
  4. Air Fry the Muffins:
    • Place the muffin tray or basket into the preheated air fryer.
    • Cook the muffins at 320°F (160°C) for about 12-15 minutes or until a toothpick inserted into the center comes out clean.
    • Check on them periodically to ensure they’re not browning too quickly. If they are, you can cover them loosely with foil.
  5. Cool and Enjoy:
    • Once done, carefully remove the muffins from the air fryer and let them cool in the muffin tin for a few minutes.
    • Transfer the muffins to a wire rack to cool completely.
    • Enjoy your delicious, soft air fryer blueberry muffins!
