Zero point, healthy and delicious Buffalo chicken celery sticks

Ingredients:

  • Chicken breast: 1 pound, cooked and shredded (use rotisserie chicken or cook it yourself)
  • Buffalo sauce: 1/4 cup (look for a low-calorie, no-sugar-added version)
  • Greek yogurt: 1/2 cup (plain, non-fat, as a substitute for ranch or blue cheese dressing)
  • Celery sticks: 6-8 large
  • Salt and pepper: To taste
  • Chopped green onions: Optional, for garnish
  • Crumbled blue cheese: Optional, for garnish

Instructions:

  1. Prepare the Chicken: If not already cooked, poach or bake the chicken breast until fully cooked. Let it cool, then shred it using two forks or your hands.
  2. Mix the Sauce: In a bowl, combine the shredded chicken with the Buffalo sauce. Stir until the chicken is evenly coated. Season with salt and pepper to taste.
  3. Prepare the Celery: Wash and cut the celery sticks into 3-4 inch pieces.
  4. Prepare the Dip: In a separate bowl, mix the Greek yogurt with a little salt and pepper. You can also add some garlic powder or onion powder if desired.
  5. Assemble: Fill each celery stick with a spoonful of the Buffalo chicken mixture.
  6. Garnish (optional): Sprinkle chopped green onions and crumbled blue cheese on top if you like.
  7. Serve: Enjoy immediately or store in the refrigerator until ready to serve.
