Delicious zero point ranch hand taco salad

Ingredients:

  • 1 lb lean ground turkey or chicken (zero points if using lean, 99% fat-free)
  • 1 packet of ranch seasoning mix (use a zero-point seasoning mix or adjust based on points)
  • 1 can of black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded lettuce
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1 avocado, sliced (optional, will add points if using)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving
  • Salsa or a zero-point dressing of your choice

Instructions:

  1. Cook the Meat:
    • In a large skillet over medium heat, cook the ground turkey or chicken until browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess fat if needed.
    • Stir in the ranch seasoning mix and cook for another 1-2 minutes, ensuring the meat is well coated.
  2. Prepare the Salad:
    • In a large bowl, combine the shredded lettuce, cherry tomatoes, red bell pepper, and onion.
    • Add the black beans and corn to the salad mixture.
  3. Assemble:
    • Top the salad with the cooked meat mixture.
    • Garnish with avocado slices (if using) and chopped cilantro.
    • Serve with lime wedges and salsa or your preferred zero-point dressing.
  4. Serve:
    • Toss everything together before serving or serve the meat on top of the salad and let everyone mix their own.
