Delicious zero point ranch hand taco salad
Ingredients:
- 1 lb lean ground turkey or chicken (zero points if using lean, 99% fat-free)
- 1 packet of ranch seasoning mix (use a zero-point seasoning mix or adjust based on points)
- 1 can of black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 cup shredded lettuce
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 1 avocado, sliced (optional, will add points if using)
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
- Salsa or a zero-point dressing of your choice
Instructions:
- Cook the Meat:
- In a large skillet over medium heat, cook the ground turkey or chicken until browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess fat if needed.
- Stir in the ranch seasoning mix and cook for another 1-2 minutes, ensuring the meat is well coated.
- Prepare the Salad:
- In a large bowl, combine the shredded lettuce, cherry tomatoes, red bell pepper, and onion.
- Add the black beans and corn to the salad mixture.
- Assemble:
- Top the salad with the cooked meat mixture.
- Garnish with avocado slices (if using) and chopped cilantro.
- Serve with lime wedges and salsa or your preferred zero-point dressing.
- Serve:
- Toss everything together before serving or serve the meat on top of the salad and let everyone mix their own.
