WEIGHT WATCHERS ZERO POINT VEGETABLE CABBAGE SOUP
Ingredients:
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 small head cabbage, chopped
- 1 can (14 oz) diced tomatoes, with juices
- 6 cups low-sodium vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- In a large soup pot or Dutch oven, heat a bit of olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 5 minutes.
- Add the green bell pepper, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
- Stir in the chopped cabbage and cook for about 3-4 minutes until slightly wilted.
- Add the diced tomatoes with their juices, vegetable broth, dried thyme, and dried oregano. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until all vegetables are tender.
- Taste and adjust seasoning if needed. If desired, garnish with fresh chopped parsley before serving.
