WEIGHT WATCHERS ZERO POINT VEGETABLE CABBAGE SOUP

Ingredients:

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 small head cabbage, chopped
  • 1 can (14 oz) diced tomatoes, with juices
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. In a large soup pot or Dutch oven, heat a bit of olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 5 minutes.
  2. Add the green bell pepper, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the chopped cabbage and cook for about 3-4 minutes until slightly wilted.
  4. Add the diced tomatoes with their juices, vegetable broth, dried thyme, and dried oregano. Season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until all vegetables are tender.
  6. Taste and adjust seasoning if needed. If desired, garnish with fresh chopped parsley before serving.
