Weight Watchers Friendly Bread pudding

Ingredients:

4 cups of stale bread (cubed)
2 cups of milk
1/2 cup of granulated sugar
2 eggs
1 teaspoon of vanilla extract
1/2 teaspoon of cinnamon (optional)
1/4 teaspoon of nutmeg (optional)
1/2 cup of raisins (optional)
Butter for greasing the baking dish
Instructions:

Preheat your oven to 350°F (175°C). Grease a baking dish with butter.

In a large mixing bowl, combine the milk and sugar. Mix until the sugar is dissolved.

Add the eggs, vanilla extract, cinnamon, and nutmeg (if using). Whisk everything together until well combined.

Place the cubed bread into the milk mixture. Let it soak for about 10-15 minutes, or until the bread has absorbed most of the liquid. You can gently press down on the bread to ensure it soaks up the mixture.

If you’re using raisins, you can add them to the mixture at this point.

Pour the bread mixture into the greased baking dish.

Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown and the pudding is set.

Allow the bread pudding to cool for a few minutes before serving.

Optional toppings or sauces:

Serve with a dusting of powdered sugar on top.
Drizzle with a caramel sauce or a vanilla sauce.
Top with a scoop of vanilla ice cream for a decadent treat.
