Weight Watchers Chickpea Salad
Ingredients:
For the Salad:
- 2 cans (15 oz each) chickpeas (garbanzo beans), drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint (optional)
For the Dressing:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions:
- Prepare the Chickpeas:
- Drain and rinse the chickpeas thoroughly under cold water. Pat them dry with a paper towel.
- Combine Salad Ingredients:
- In a large bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, fresh parsley, and mint (if using).
- Make the Dressing:
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
- Toss and Coat:
- Pour the dressing over the salad ingredients and toss everything together until well coated.
- Chill (Optional):
- If time allows, cover the bowl and refrigerate the chickpea salad for at least 30 minutes to let the flavors meld.
- Serve:
- Serve the chickpea salad chilled, and adjust the seasoning if necessary.
- Garnish (Optional):
- Garnish with additional fresh herbs, such as parsley or mint, before serving.
