Weight Watchers Chickpea Salad


For the Salad:

  • 2 cans (15 oz each) chickpeas (garbanzo beans), drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint (optional)

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste


  1. Prepare the Chickpeas:
    • Drain and rinse the chickpeas thoroughly under cold water. Pat them dry with a paper towel.
  2. Combine Salad Ingredients:
    • In a large bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, fresh parsley, and mint (if using).
  3. Make the Dressing:
    • In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
  4. Toss and Coat:
    • Pour the dressing over the salad ingredients and toss everything together until well coated.
  5. Chill (Optional):
    • If time allows, cover the bowl and refrigerate the chickpea salad for at least 30 minutes to let the flavors meld.
  6. Serve:
    • Serve the chickpea salad chilled, and adjust the seasoning if necessary.
  7. Garnish (Optional):
    • Garnish with additional fresh herbs, such as parsley or mint, before serving.
