Weight Watchers Chicken Cutlets

Ingredients:

  • 4 boneless, skinless chicken breast cutlets (about 4 ounces each)
  • Salt and black pepper to taste
  • ½ cup breadcrumbs (preferably whole-wheat for added fiber)
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning (optional)
  • 1 large egg (or use egg whites for lower points)
  • 1 tablespoon water
  • Cooking spray or 1-2 teaspoons olive oil

Optional Garnishes:

  • Fresh parsley, chopped
  • Lemon wedges

Instructions:

  1. Prepare the Chicken: Season chicken cutlets with salt and pepper on both sides.
  2. Make the Breading: In a shallow bowl, mix the breadcrumbs, Parmesan cheese, and Italian seasoning.
  3. Prepare Egg Mixture: In another bowl, whisk together the egg and water.
  4. Bread the Chicken: Dip each chicken cutlet in the egg mixture, letting any excess drip off, and then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Cook the Cutlets:
    • Oven Method: Preheat oven to 400°F (200°C). Place cutlets on a baking sheet coated with cooking spray. Lightly spray the tops of the chicken with cooking spray. Bake for 15-20 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
    • Stovetop Method: Heat a nonstick skillet over medium heat and add a little olive oil or cooking spray. Cook each cutlet for 4-5 minutes per side or until golden brown and cooked through.
  6. Serve: Garnish with fresh parsley and a squeeze of lemon, if desired.
