Weight Watchers Chicken Cutlets

Ingredients:
- 4 boneless, skinless chicken breast cutlets (about 4 ounces each)
- Salt and black pepper to taste
- ½ cup breadcrumbs (preferably whole-wheat for added fiber)
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon Italian seasoning (optional)
- 1 large egg (or use egg whites for lower points)
- 1 tablespoon water
- Cooking spray or 1-2 teaspoons olive oil
Optional Garnishes:
- Fresh parsley, chopped
- Lemon wedges
Instructions:
- Prepare the Chicken: Season chicken cutlets with salt and pepper on both sides.
- Make the Breading: In a shallow bowl, mix the breadcrumbs, Parmesan cheese, and Italian seasoning.
- Prepare Egg Mixture: In another bowl, whisk together the egg and water.
- Bread the Chicken: Dip each chicken cutlet in the egg mixture, letting any excess drip off, and then coat with the breadcrumb mixture, pressing gently to adhere.
- Cook the Cutlets:
- Oven Method: Preheat oven to 400°F (200°C). Place cutlets on a baking sheet coated with cooking spray. Lightly spray the tops of the chicken with cooking spray. Bake for 15-20 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
- Stovetop Method: Heat a nonstick skillet over medium heat and add a little olive oil or cooking spray. Cook each cutlet for 4-5 minutes per side or until golden brown and cooked through.
- Serve: Garnish with fresh parsley and a squeeze of lemon, if desired.
