Weight Watchers Chicken Broccoli CasseroleI

Ingredients:
- 2 cups cooked chicken breast, shredded or diced
- 2 cups broccoli florets, steamed or blanched
- 1 cup reduced-fat shredded cheddar cheese
- 1 cup non-fat Greek yogurt
- 1/2 cup low-sodium chicken broth
- 1/2 cup light mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine Greek yogurt, chicken broth, light mayonnaise, Dijon mustard, garlic powder, salt, and pepper. Mix well until smooth.
- Add shredded chicken, steamed broccoli florets, and half of the shredded cheddar cheese to the bowl. Mix everything together until well combined.
- Lightly spray a baking dish with cooking spray. Transfer the chicken and broccoli mixture into the baking dish, spreading it evenly.
- Sprinkle the remaining shredded cheddar cheese over the top.
- Bake in the preheated oven for about 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
