Weight Watchers Cheeseburger Casserole

Ingredients:

  • 1 lb extra-lean ground beef (95% lean or higher)
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked cauliflower rice or cooked brown rice
  • 1 cup reduced-fat shredded cheddar cheese
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook Vegetables: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the chopped onion, bell pepper, and minced garlic. Cook until the vegetables are softened.
  3. Add Tomatoes and Sauce: Stir in the drained diced tomatoes, ketchup, yellow mustard, Worcestershire sauce, dried oregano, garlic powder, salt, and pepper. Mix well and let it simmer for a few minutes.
  4. Combine with Rice: Add the cooked cauliflower rice or brown rice to the skillet. Stir to combine with the meat and sauce mixture.
  5. Transfer to Baking Dish: Transfer the mixture to the prepared baking dish, spreading it out evenly.
  6. Top with Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  7. Bake: Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley if desired, and let it rest for a few minutes before serving.

  • Rice Substitute: If you prefer a lower-carb option, use cauliflower rice instead of brown rice.
