Weight Watchers Moist Sour Cream Coffee Cake

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar substitute (like Stevia or monk fruit)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fat-free sour cream

For the Streusel Topping:

  • 1/4 cup brown sugar substitute (like Swerve or Truvia)
  • 1/4 cup chopped nuts (such as walnuts or pecans)
  • 1 teaspoon ground cinnamon

For the Glaze (Optional):

  • 1/2 cup powdered sugar substitute
  • 1-2 tablespoons fat-free milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
  2. Prepare Streusel Topping: In a small bowl, mix together brown sugar substitute, chopped nuts, and ground cinnamon for the streusel topping. Set aside.
  3. Make the Cake Batter: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  4. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar substitute until light and fluffy.
  5. Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Alternate Dry Ingredients and Sour Cream: Gradually add the dry ingredients to the wet ingredients, alternating with the fat-free sour cream. Begin and end with the dry ingredients. Mix until just combined.
  7. Layer Batter and Streusel: Spread half of the batter into the prepared baking pan. Sprinkle half of the streusel topping over the batter. Repeat with the remaining batter and streusel.
  8. Bake: Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool: Allow the coffee cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Optional Glaze: If desired, whisk together powdered sugar substitute, fat-free milk, and vanilla extract to make a glaze. Drizzle it over the cooled coffee cake.
  11. Slice and Serve: Slice the coffee cake into squares and serve.
