Weight Watchers Apple Fritter Cake

Ingredients:

For Filling:

  • 1 heaping cup of sliced apples (I cored and quartered and then sliced)
  • 1/4 teaspoon cinnamon

For Cake:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain non-fat Greek yogurt
  • 1/3 cup granulated sugar or a sugar substitute suitable for baking
  • 1/3 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk or any other milk of choice

For Topping:

  • 2 tablespoons melted butter (or a light butter alternative)
  • 1/3 cup granulated sugar or a sugar substitute suitable for baking
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a small bowl, combine the sliced apples with 1/4 teaspoon of cinnamon. Set aside.
  3. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat together the applesauce, Greek yogurt, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk. Mix until just combined.
  6. Spread half of the batter into the prepared baking pan. Layer the apple slices on top, and then spread the remaining batter over the apples.
  7. In a small bowl, mix together the melted butter, granulated sugar, and ground cinnamon for the topping. Drizzle this mixture over the batter.
  8. Use a knife to swirl the topping into the batter.
  9. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool before slicing and serving.
