Ingredients
- ½ medium green cabbage, chopped
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, no added sugar
- 4 cups low-sodium vegetable or chicken broth
- 1 teaspoon olive oil
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- Salt, to taste
- 1 tablespoon fresh lemon juice
- Fresh parsley, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, celery, and garlic. Cook for 3–4 minutes until slightly softened.
- Add the chopped cabbage and cook for another 2 minutes.
- Stir in the diced tomatoes, broth, paprika, black pepper, oregano, and a small amount of salt.
- Bring the soup to a boil.
- Reduce the heat, cover, and simmer for 20–25 minutes, or until the cabbage and vegetables are tender.
- Stir in the lemon juice and adjust the seasoning.
- Garnish with fresh parsley and serve hot.
