veggie nachos


Ingredients:
1 bag of tortilla chips
1 can of black beans, drained and rinsed
1 red bell pepper, diced
1 jalapeno pepper, sliced
1 small onion, diced
1/2 cup of corn
1/2 cup of shredded cheddar cheese
1/4 cup of chopped fresh cilantro
1 lime, cut into wedges
Salt and pepper to taste
Instructions:
Preheat your oven to 350°F (175°C).
Spread the tortilla chips on a large baking sheet in a single layer.
Sprinkle the black beans, red bell pepper, jalapeno pepper, onion, and corn evenly over the tortilla chips.
Sprinkle the shredded cheddar cheese over the top of the vegetables.
Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
Remove the baking sheet from the oven and sprinkle the chopped cilantro over the top of the nachos.
Squeeze lime wedges over the nachos and sprinkle with salt and pepper to taste.
Serve the nachos hot and enjoy!

Guacamole
Sour cream
Salsa
Diced tomatoes
Sliced avocado
Sliced black
