Vegan Quiche – Spinach, Mushroom, Spam and Cheez
Vegan Quiche – Spinach, Mushroom, Spam and Cheez
Ingredients:
- 1 pre-made vegan pie crust
- 1 cup of fresh spinach
- 1 cup of sliced mushrooms
- 1/2 cup of vegan cheese, shredded
- 1/2 cup of unsweetened non-dairy milk (such as almond or soy milk)
- 1/2 cup of silken tofu
- 1 tablespoon of olive oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of garlic powder
Instructions:
- Preheat your oven to 375°F (190°C).
- In a pan, heat up the olive oil on medium heat. Add the mushrooms and sauté them for about 5 minutes or until they are tender.
- Add the spinach to the pan and continue to sauté until the spinach has wilted. Remove from heat.
- In a blender, combine the non-dairy milk, silken tofu, salt, black pepper, and garlic powder. Blend until smooth.
- Add the sautéed mushrooms and spinach to the blender and pulse a few times until the mixture is well combined but still chunky.
- Pour the mixture into the pre-made pie crust.
- Sprinkle the shredded vegan cheese on top of the mixture.
- Bake the quiche in the oven for about 30 minutes or until the top is golden brown.
- Once done, remove the quiche from the oven and let it cool for a few minutes before serving.
