Vegan Quiche – Spinach, Mushroom, Spam and Cheez

Ingredients:

  • 1 pre-made vegan pie crust
  • 1 cup of fresh spinach
  • 1 cup of sliced mushrooms
  • 1/2 cup of vegan cheese, shredded
  • 1/2 cup of unsweetened non-dairy milk (such as almond or soy milk)
  • 1/2 cup of silken tofu
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of garlic powder

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, heat up the olive oil on medium heat. Add the mushrooms and sauté them for about 5 minutes or until they are tender.
  3. Add the spinach to the pan and continue to sauté until the spinach has wilted. Remove from heat.
  4. In a blender, combine the non-dairy milk, silken tofu, salt, black pepper, and garlic powder. Blend until smooth.
  5. Add the sautéed mushrooms and spinach to the blender and pulse a few times until the mixture is well combined but still chunky.
  6. Pour the mixture into the pre-made pie crust.
  7. Sprinkle the shredded vegan cheese on top of the mixture.
  8. Bake the quiche in the oven for about 30 minutes or until the top is golden brown.
  9. Once done, remove the quiche from the oven and let it cool for a few minutes before serving.
