Vegan Carrot Dawgs


Ingredients:
4 large carrots
4 hot dog buns
1 tablespoon olive oil
2 tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon liquid smoke
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Toppings of your choice (e.g., ketchup, mustard, onions, relish, sauerkraut)
Instructions:
Preheat your grill or oven to medium-high heat.
Peel the carrots and trim the ends to match the length of the hot dog buns. You want them to resemble hot dogs in size.
In a small bowl, whisk together the olive oil, soy sauce, maple syrup, liquid smoke, paprika, garlic powder, and black pepper. This will be the marinade for the carrots.
Place the carrots in a shallow dish and pour the marinade over them, making sure they are evenly coated. Let them marinate for at least 15 minutes, or longer if time allows.
If grilling, place the marinated carrots directly on the grill grates and cook for about 8-10 minutes, turning occasionally, until they are slightly charred and tender. If baking, preheat your oven to 400°F (200°C) and place the carrots on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until they are cooked through.
While the carrots are cooking, you can toast the hot dog buns if desired.
Once the carrots are done, remove them from the grill or oven and let them cool for a few minutes.
Place each carrot inside a hot dog bun and top with your favorite toppings, such as ketchup, mustard, onions, relish, or sauerkraut.
Serve the vegan carrot dawgs immediately and enjoy!
