Ingredients:
1 pre-made pizza crust (check the label to ensure it’s vegan)
1 cup barbecue sauce (make sure it’s vegan)
1 block of firm tofu, pressed and drained
1 tablespoon olive oil
1/2 red onion, thinly sliced
1/2 cup sliced bell peppers (any color you prefer)
1/2 cup corn kernels
1/4 cup chopped fresh cilantro (optional)
Salt and pepper to taste
Instructions:
Preheat your oven according to the instructions on the pizza crust package.
In a bowl, combine the barbecue sauce with salt and pepper to taste. Set aside.
Cut the pressed tofu into small cubes or slices. Heat the olive oil in a non-stick pan over medium heat. Add the tofu and cook until it starts to brown and become slightly crispy, about 5-7 minutes.
Remove the tofu from the pan and place it in a bowl. Pour about half of the barbecue sauce over the tofu and toss gently to coat it evenly. Set aside.
Place the pre-made pizza crust on a baking sheet or pizza stone.
Spread the remaining barbecue sauce evenly over the pizza crust, leaving a small border around the edges.
Scatter the sliced red onion, bell peppers, corn kernels, and marinated tofu over the sauce.
Bake the pizza in the preheated oven for the time indicated on the pizza crust package or until the crust is golden and crispy.
Remove the pizza from the oven and let it cool slightly. Sprinkle with chopped cilantro (if desired) and slice into pieces.
