Vegan-Baked French Toast


  • French Toast:
    • 1 loaf of crusty bread (like French bread or baguette), cut into thick slices
    • 2 cups non-dairy milk (such as almond, soy, or oat milk)
    • 1/2 cup coconut milk (for creaminess)
    • 2 tablespoons ground flaxseed
    • 1/4 cup maple syrup
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • Pinch of salt
  • Topping:
    • 1/4 cup brown sugar
    • 1 teaspoon ground cinnamon
    • 1/2 cup chopped pecans or walnuts (optional)
    • Fresh fruit (such as berries or sliced bananas), for serving
    • Additional maple syrup, for serving


  1. Prepare the Flaxseed Mixture:
    • In a small bowl, mix the ground flaxseed with 6 tablespoons of water. Let it sit for about 10 minutes to thicken. This will act as the egg replacer.
  2. Prepare the French Toast Batter:
    • In a large mixing bowl, combine the non-dairy milk, coconut milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Add the thickened flaxseed mixture and whisk until well combined.
  3. Soak the Bread:
    • Arrange the bread slices in a single layer in a large baking dish. Pour the French toast batter over the bread, making sure each slice is well coated. Let the bread soak for at least 15-20 minutes, or cover and refrigerate overnight for a more intense flavor.
  4. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  5. Prepare the Topping:
    • In a small bowl, mix together the brown sugar and ground cinnamon. If using, add the chopped nuts.
  6. Assemble the French Toast:
    • Sprinkle the brown sugar mixture evenly over the soaked bread slices.
  7. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the French toast is cooked through.
  8. Serve:
    • Let the baked French toast cool for a few minutes before serving. Top with fresh fruit and drizzle with additional maple syrup if desired. Enjoy!
