1/4 cup brown sugar
1 teaspoon ground cinnamon

Instructions:
Prepare the Flaxseed Mixture:
In a small bowl, mix the ground flaxseed with 6 tablespoons of water. Let it sit for about 10 minutes to thicken. This will act as the egg replacer.
Prepare the French Toast Batter:
In a large mixing bowl, combine the non-dairy milk, coconut milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Add the thickened flaxseed mixture and whisk until well combined.
Soak the Bread:
Arrange the bread slices in a single layer in a large baking dish. Pour the French toast batter over the bread, making sure each slice is well coated. Let the bread soak for at least 15-20 minutes, or cover and refrigerate overnight for a more intense flavor.
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare the Topping:
In a small bowl, mix together the brown sugar and ground cinnamon. If using, add the chopped nuts.
