VEGAN AVOCADO-TOMATEN-BROT

Ingredients:
1 ripe avocado, mashed
2-3 slices of bread (use your favorite kind)
1 medium-sized tomato, sliced
1/4 red onion, thinly sliced
Salt and pepper to taste
Fresh parsley or cilantro (optional)
Instructions:
Toast the bread slices to your liking.
Spread the mashed avocado evenly on each slice of toast.
Top the avocado with the sliced tomatoes and red onions.
Sprinkle salt and pepper to taste.
Garnish with fresh parsley or cilantro, if desired.
Serve immediately and enjoy!

Sliced cucumber or bell peppers
Vegan cheese or hummus
Sprouts or microgreens
Balsamic glaze or olive oil drizzle
