🛒 Ingredients

For the chicken & vegetables

  • 1½–2 lb (700–900 g) boneless, skinless chicken breast or thighs
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large yellow or orange bell pepper
  • 1 large yellow onion
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1½ tbsp chili powder
  • 2 tsp smoked paprika
  • 1½ tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • ½ tsp black pepper
  • 1 tsp salt
  • ½ tsp cayenne pepper, optional
  • Juice of 1 lime

For serving

  • Warm flour or corn tortillas
  • Sour cream
  • Avocado or guacamole
  • Shredded cheese
  • Fresh cilantro
  • Lime wedges
  • Salsa or pico de gallo

🔪 Preparation

  1. Prepare the chicken:
    Pat the chicken dry and cut it into bite-size pieces. Keeping the pieces relatively similar in size helps them cook evenly.
  2. Slice the vegetables:
    Cut the peppers into thin strips and slice the onion into wedges or strips. Don’t make them too thin—they should remain slightly crisp after roasting.
  3. Make the seasoning:

  4. Marinate everything:
    Add the chicken, peppers, and onions to the bowl. Add olive oil, minced garlic, and lime juice. Toss thoroughly until everything is coated with the seasoning mixture. For the best flavor, cover and refrigerate for 30 minutes to 2 hours. If you’re short on time, you can cook it immediately.

  1. Preheat the oven:
    Heat your oven to 425°F (220°C). For extra browning, let the baking sheet heat in the oven while it preheats.
  2. Arrange the fajitas:
    Spread the chicken, peppers, and onions across the baking sheet in a single layer. Avoid piling everything on top of each other. Crowding causes the vegetables to steam instead of becoming beautifully charred.
  3. Roast:
    Bake for approximately 20–25 minutes, stirring once halfway through.
  4. Get that restaurant-style char:
    For the final 2–4 minutes, switch the oven to broil/high grill. Watch closely—the edges should become browned and slightly charred without burning.
  5. Check the chicken:
    The thickest pieces should reach 165°F (74°C) internally.
  6. Finish:
    Remove from the oven and squeeze fresh lime juice over everything. Let the chicken rest for about 5 minutes before serving.
