Ingredients
For the avocado filling
- 2 large ripe avocados
- 1 tablespoon fresh lemon or lime juice
- 1 small garlic clove, finely grated or minced
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon red pepper flakes
- 1 tablespoon finely chopped fresh cilantro or parsley
- 1 teaspoon extra-virgin olive oil
- 1ā2 teaspoons finely chopped red onion, optional
- ½ small tomato, finely diced, optional
For the sandwich
- 4 thick slices sourdough or rustic white bread
- 4ā6 slices mozzarella, provolone, Monterey Jack, Havarti, or cheddar
- 2 tablespoons softened butter
- 1 tablespoon mayonnaise, optional
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- Pinch of salt
- Freshly ground black pepper

1. Make the avocado mixture
Cut the avocados in half and remove the pits. Scoop the flesh into a bowl.
Mash the avocado with a fork, but don’t turn it completely smooth. Leave some small chunks so the sandwich has texture like the one in your photo.
Add:
- lemon/lime juice
- garlic
- salt
- black pepper
- red pepper flakes
- olive oil
- herbs
Mix gently.
Taste and adjust the seasoning. The avocado should taste bright, creamy, slightly salty, and a little spicy.
Tip: The acid from the lemon or lime doesn’t just add flavorāit also helps keep the avocado from browning quickly.
2. Prepare the bread
For the best result, use thick-cut sourdough with a substantial crust.
Mix the softened butter with garlic powder, smoked paprika, and a small pinch of salt.
Spread the mixture generously over one side of each bread slice.
For an extra-rich grilled-cheese texture, spread a very thin layer of mayonnaise on the opposite side of each slice. You won’t really taste the mayonnaise, but it helps create an exceptionally crisp, browned crust.
3. Build the sandwich
Place two slices of bread butter-side down.
Add a layer of cheese.
Then spoon on a generous amount of smashed avocado.
Don’t be shy with the avocadoāthe filling should be thick.
Add another layer of cheese over the avocado.
Finish with the second slice of bread, butter-side facing upward.
Best cheese combination
For a sandwich closest to the picture, try:
Mozzarella + Havarti
Mozzarella provides the dramatic stretch, while Havarti gives you a buttery, creamy flavor.
For a stronger flavor, use:
Sharp cheddar + Monterey Jack
Or for an especially luxurious sandwich:
GruyĆØre + mozzarella
4. Cook it slowly
Place a heavy skillet over medium-low heat.
Don’t start with high heat. The bread will burn before the cheese melts.
Place the sandwiches into the skillet.
Cook for approximately 3ā5 minutes, pressing down gently with a spatula once or twice.
When the bottom is deeply golden brown and crisp, carefully flip the sandwich.
Cook the second side for another 3ā5 minutes.
If the bread is browning too quickly while the cheese isn’t melting, reduce the heat to low and cover the skillet for 1ā2 minutes.
The trapped steam will help melt the cheese without burning the bread.
5. Make it extra crispy
For the really impressive crust shown in your image, remove the lid and cook for another 30ā60 seconds on each side.
You want:
deep golden brown + crunchy crust + soft interior + completely melted cheese.
Don’t rush this step.
6. Rest briefly
Transfer the sandwich to a cutting board.
Let it rest for about 1ā2 minutes.
Then cut it diagonally.
That short rest allows the melted cheese to settle slightly while keeping the sandwich hot and gooey.
š„ Restaurant-style finishing touch
Once you’ve cut the sandwich, sprinkle a tiny amount of:
- flaky sea salt
- cracked black pepper
- red pepper flakes
over the exposed avocado and cheese.
Add a few chopped fresh herbs on top.
For a sweet-spicy version, drizzle a very small amount of hot honey over the filling.

If I were recreating the sandwich in your picture, I’d use:
Thick sourdough + garlic butter + mozzarella + Havarti + chunky avocado + lime + garlic + chili flakes + black pepper + fresh cilantro.
The key is to keep the avocado chunky, use plenty of cheese, and cook the sandwich low and slow until the bread becomes deeply crisp and the cheese is completely melted.
