Difficulty: Medium
Ingredients
For the cauliflower
- 2 large whole cauliflower heads
- 4 tablespoons extra-virgin olive oil
- 3 tablespoons melted butter
- 5 cloves garlic, finely minced
- 1½ teaspoons smoked paprika
- 1 teaspoon sweet paprika
- 1½ teaspoons chili flakes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon Italian seasoning or dried oregano
- ½ teaspoon freshly ground black pepper
- 1 teaspoon salt
- ½ teaspoon turmeric, optional, for extra golden color
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon honey or maple syrup
- 1 tablespoon finely grated Parmesan, optional
- 1 tablespoon sesame seeds
- 1 tablespoon chopped fresh parsley
For finishing
- 1 tablespoon melted butter
- 1 tablespoon olive oil
- 1 small garlic clove, grated
- 1 teaspoon lemon juice
- Pinch of chili flakes
- Fresh parsley or cilantro
- Freshly grated Parmesan, optional
- Lemon wedges
1. Prepare the cauliflower
Remove the outer leaves from each cauliflower, but don’t completely cut away the stem. The stem is what helps hold the steaks together.
Wash the cauliflower and dry it very thoroughly.
Place each head upright on a cutting board.
Using a large sharp knife, cut the cauliflower into slices approximately 1½–2 inches thick.
You should aim for about 2 large steaks from each head.
The outer pieces will naturally fall apart into florets. Don’t throw them away — roast them alongside the steaks. They become wonderfully crispy.
2. Make the spicy garlic coating
In a bowl, combine:
- olive oil
- melted butter
- minced garlic
- smoked paprika
- sweet paprika
- chili flakes
- garlic powder
- onion powder
- cumin
- oregano
- black pepper
- salt
- turmeric
- lemon juice
- lemon zest
- honey
Mix everything thoroughly.
The mixture should look like a thick, intensely orange-red garlic paste.
Tip: The combination of butter and olive oil gives you a much better crust than using oil alone. The butter contributes browning and richness, while the oil helps prevent the butter from burning too quickly.
3. Coat the cauliflower generously
Place the cauliflower steaks on a large baking tray or grill-safe pan.
Brush the seasoning mixture generously over the top of every steak.
Don’t just brush the surface.
Use your fingers or a pastry brush to push some of the seasoning into the natural gaps between the cauliflower florets.
Turn the steaks over and coat the other side.
Finally, brush the edges.
If you have leftover seasoning mixture, save it for later rather than wasting it.
Let the cauliflower sit for 20–30 minutes.
This short resting period allows the garlic, paprika, chili and lemon to penetrate the surface.
4. Preheat the oven
Preheat your oven to:
425°F / 220°C
Place a heavy baking sheet or cast-iron pan inside while the oven heats.
A hot cooking surface is important because the cauliflower should start sizzling as soon as it touches the pan.
For an even more grilled appearance, use a heavy cast-iron grill pan.
5. Start roasting
Carefully remove the hot tray.
Drizzle it lightly with olive oil.
Place the cauliflower steaks onto the hot surface.
You should hear a slight sizzle.
This is exactly what you want.
Roast for approximately:
20–25 minutes
without moving them.
The underside should become deeply golden brown.
6. Make the crispy topping
While the cauliflower is roasting, mix:
- sesame seeds
- Parmesan, if using
- a pinch of chili flakes
- 1 tablespoon chopped parsley
After the first 20–25 minutes, remove the tray.
Brush the cauliflower with the remaining seasoning mixture.
Sprinkle the sesame-Parmesan mixture over the top.
Return the cauliflower to the oven.
Increase the temperature to:
450°F / 230°C
Roast for another 8–12 minutes.
The surface should become dark golden, caramelized and slightly crispy.
Watch it carefully during the final few minutes because the garlic and paprika can burn quickly.
7. Get that beautiful charred finish
For the appearance shown in your photo, switch the oven to broil/grill for the final 1–3 minutes.
Keep the tray relatively close to the broiler.
Do not walk away.
The cauliflower can go from beautifully charred to burnt very quickly.
You’re looking for:
- deep golden edges
- browned garlic
- crisp chili flakes
- caramelized surface
- slightly blackened spots
- tender white cauliflower underneath
8. Make the finishing butter
While the cauliflower is finishing, combine:
- 1 tablespoon melted butter
- 1 tablespoon olive oil
- 1 grated garlic clove
- 1 teaspoon lemon juice
- pinch of chili flakes
Mix well.
As soon as the cauliflower comes out of the oven, brush this mixture lightly over the hot steaks.
The residual heat will bloom the garlic and chili.
9. Rest the cauliflower
Let the cauliflower rest for approximately 5 minutes.
This allows the juices and butter to settle.
Then sprinkle generously with freshly chopped parsley.
Add a little extra lemon zest if desired.
Finish with freshly grated Parmesan and a few drops of lemon juice.
Serve with lemon wedges.
🌶️ The Secret to Maximum Flavor
For the most flavorful version, don’t rely on paprika and oil alone.
Use three layers of flavor:
First layer: garlic + butter + olive oil
This creates the rich base.
Second layer: smoked paprika + chili + cumin + herbs
This gives the cauliflower its roasted, spicy character.
Third layer: lemon + fresh herbs
This cuts through the richness and makes the whole dish taste brighter.
The lemon should be added both before and after cooking. The first addition seasons the cauliflower, while the final squeeze gives it freshness.
🔥 If You Want It Even Crispier
For an especially crispy crust, add:
- 2 tablespoons panko breadcrumbs
- 1 tablespoon Parmesan
- 1 tablespoon sesame seeds
to the seasoning mixture immediately before the final roasting stage.
The breadcrumbs absorb the flavored butter and oil and create a fantastic crunchy crust.
🧄 Creamy Garlic Sauce
This cauliflower is excellent with a cold garlic sauce.
Mix:
- ½ cup Greek yogurt
- 1 tablespoon mayonnaise
- 1 grated garlic clove
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- 1 tablespoon olive oil
Whisk until smooth.
Refrigerate for 15–20 minutes before serving.
Spoon a little sauce onto the plate and place the hot cauliflower steak on top.
🌿 Best Garnishes
For the presentation in your photo, use:
- freshly chopped parsley
- toasted sesame seeds
- chili flakes
- lemon zest
- a drizzle of olive oil
- Parmesan shavings
- lemon wedges
Don’t drown the cauliflower in sauce. The beautiful browned crust should remain visible.
⭐ Chef’s Tips
1. Keep the stem intact.
This is the most important trick when cutting cauliflower steaks. If you remove too much of the core, the steaks will fall apart.
2. Dry the cauliflower well.
Water creates steam. Steam prevents browning.
3. Use a very hot pan.
A preheated cast-iron pan gives you a much better crust.
4. Don’t overcrowd the pan.
Leave space between the steaks so hot air can circulate.
5. Don’t flip repeatedly.
Let one side develop a proper crust before turning.
6. Don’t burn the garlic.
If the top becomes dark too quickly, reduce the oven temperature slightly. You want roasted garlic, not bitter burnt garlic.
7. Finish with acid.
A squeeze of fresh lemon at the end makes a huge difference.
8. Serve immediately.
The crust is at its best while hot and crispy.
🌟 Final result
You should end up with tender, almost buttery cauliflower in the center, surrounded by a deeply roasted golden crust packed with garlic, smoked paprika, chili, herbs and sesame, finished with fresh parsley and lemon.
