2 medium potatoes (any variety, peeled if desired)
2 eggs
1 tablespoon olive oil or butter
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika (optional)
¼ teaspoon garlic powder (optional)
¼ teaspoon onion powder (optional)
2 tablespoons shredded cheese (optional)
Fresh herbs for garnish (parsley or green onions)
Instructions:
Prepare the potatoes:
Dice the potatoes into small cubes.
Heat oil or butter in a pan over medium heat.
Add the potatoes and season with salt, pepper, paprika, garlic powder, and onion powder.
Cook for about 10-12 minutes, stirring occasionally, until golden brown and crispy.
Add the eggs:
Make two small wells in the potatoes.
Crack an egg into each well.
Cover the pan with a lid and cook for about 3-5 minutes, or until the egg whites are set but the yolks are still slightly runny (cook longer if you prefer firm yolks).
Finishing touches:
Sprinkle with shredded cheese if using, and let it melt.
Garnish with fresh herbs.
Serving Suggestions:
Serve hot with toast or avocado slices.
Add cooked bacon or sausage for extra protein.
Drizzle with hot sauce or ketchup for extra flavor.
