Two Potatoes & Two Eggs

Ingredients:

  • 2 medium potatoes (any variety, peeled if desired)
  • 2 eggs
  • 1 tablespoon olive oil or butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon onion powder (optional)
  • 2 tablespoons shredded cheese (optional)
  • Fresh herbs for garnish (parsley or green onions)

Instructions:

  1. Prepare the potatoes:
    • Dice the potatoes into small cubes.
    • Heat oil or butter in a pan over medium heat.
    • Add the potatoes and season with salt, pepper, paprika, garlic powder, and onion powder.
    • Cook for about 10-12 minutes, stirring occasionally, until golden brown and crispy.
  2. Add the eggs:
    • Make two small wells in the potatoes.
    • Crack an egg into each well.
    • Cover the pan with a lid and cook for about 3-5 minutes, or until the egg whites are set but the yolks are still slightly runny (cook longer if you prefer firm yolks).
  3. Finishing touches:
    • Sprinkle with shredded cheese if using, and let it melt.
    • Garnish with fresh herbs.

Serving Suggestions:

  • Serve hot with toast or avocado slices.
  • Add cooked bacon or sausage for extra protein.
  • Drizzle with hot sauce or ketchup for extra flavor.
