Sweet Potato & Chick Pea Curry

Ingredients
16 – 20 oz chickpeas ( I pre cooked mine)
1 large sweet potato cubed
One red bell pepper diced
16 ounces cherry tomatoes halved
Large onion diced
3 to 4 cloves of garlic
Can of water chestnuts sliced
One can of coconut milk
16 ounces green peas
2 tablespoons fresh diced ginger
3 to 4 tablespoons of curry powder of choice.
Throw everything but the peas in the crockpot on high for three hours. Throw in the peas and serve!!
