Apple, fennel and caramelised onion sausage rolls
Ingredients
12 sosages (or 500g sosage mix – I used some defrosted Linda Macartney and some Richmond ones)
2 packs of ready made puff pastry (1 sheet in each)
1 onion
3 shallots (as I had 3 left!)
1 apple
2 teaspoons fennel seed
Black pepper
1 teaspoon thyme (or more or other herbs you like!)

- Chop and fry the onion/shallots for a long time (well over 10 mins to caramelise)
- Grate and add the apple and thyme, keep frying on a low heat
- toast the fennel seed and crush (I just chopped them up as I don’t have a pestle and mortar)
- mix everything together (I just used pepper as the sosages are salty enough!)
Cut a sheet of puff pasty in half lengthways
Squidge the sosage mx along it and roll up, leaving the seal on the underside
Cut into 8 pieces and bake for a good 25 mins on gas mark 4/5
and repeat if making a big batch!
