Southern Peach Cobbler

Ingredients:

  • For the filling:
    • 8 fresh peaches, peeled, pitted, and sliced (or use 6 cups of canned peaches, drained)
    • 1 cup granulated sugar
    • ½ cup brown sugar
    • 1 tsp ground cinnamon
    • ½ tsp ground nutmeg
    • 1 tsp vanilla extract
    • 2 tsp lemon juice
    • 2 tbsp cornstarch (optional, for a thicker filling)
  • For the topping:
    • 1 cup all-purpose flour
    • 1 cup granulated sugar
    • 1 tsp baking powder
    • ½ tsp salt
    • 1 large egg
    • 6 tbsp unsalted butter, melted
    • 1 tsp ground cinnamon (optional, for sprinkling)

Instructions:

  1. Prepare the Filling:
    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Mix well to coat the peaches evenly. If you prefer a thicker filling, add the cornstarch and mix again.
    • Pour the peach mixture into a 9×13-inch baking dish.
  2. Make the Topping:
    • In a separate mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    • Add the egg and mix until the mixture resembles coarse crumbs.
    • Evenly sprinkle the topping over the peaches in the baking dish.
  3. Add Butter:
    • Drizzle the melted butter evenly over the topping. If you like, sprinkle some ground cinnamon over the top for extra flavor.
  4. Bake:
    • Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the filling is bubbling.
  5. Serve:
    • Let the cobbler cool slightly before serving. It’s delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
