Southern Peach Cobbler
Ingredients:
- For the filling:
- 8 fresh peaches, peeled, pitted, and sliced (or use 6 cups of canned peaches, drained)
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp vanilla extract
- 2 tsp lemon juice
- 2 tbsp cornstarch (optional, for a thicker filling)
- For the topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp salt
- 1 large egg
- 6 tbsp unsalted butter, melted
- 1 tsp ground cinnamon (optional, for sprinkling)
Instructions:
- Prepare the Filling:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Mix well to coat the peaches evenly. If you prefer a thicker filling, add the cornstarch and mix again.
- Pour the peach mixture into a 9×13-inch baking dish.
- Make the Topping:
- In a separate mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the egg and mix until the mixture resembles coarse crumbs.
- Evenly sprinkle the topping over the peaches in the baking dish.
- Add Butter:
- Drizzle the melted butter evenly over the topping. If you like, sprinkle some ground cinnamon over the top for extra flavor.
- Bake:
- Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the filling is bubbling.
- Serve:
- Let the cobbler cool slightly before serving. It’s delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
