Ingredients
Low-carb “pastry” base (choose one)
Option 1: Almond flour dough (best for low carb)
- 1½ cups almond flour
- 1 cup shredded mozzarella
- 2 tbsp cream cheese
- 1 egg
Option 2: Moderate-carb option
- Whole wheat puff pastry (use smaller portions)
Filling
- 250 g lean minced meat (chicken, turkey, or lean beef)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- ½ cup chopped spinach or bell peppers
- ½ cup shredded cheese (mozzarella or cheddar, reduced-fat if preferred)
- 1 tsp paprika or chili powder
- ½ tsp cumin (optional)
- Salt & black pepper
- 1 tbsp olive oil
Instructions
- Cook filling
Heat oil, sauté onion and garlic. Add minced meat and cook until browned.
Stir in vegetables and spices, cook until soft. Let cool slightly. - Prepare dough (if using almond flour)
Melt mozzarella + cream cheese, mix with almond flour and egg to form dough. - Assemble
Roll or press dough flat, add filling, sprinkle cheese, fold or shape into pockets/roll. - Bake
180°C (350°F) for 20–25 minutes until golden.
