Ingredients
- 1 cup cooked shredded chicken breast
- 4 cups low-sodium chicken broth
- 1 cup unsweetened almond milk (or low-fat milk)
- ¼ cup light cream cheese or ½ cup Greek yogurt
- 1 cup cauliflower florets (small pieces)
- ½ cup broccoli (optional)
- 2 cloves garlic (minced)
- 1 tbsp olive oil or butter
- ¼ cup grated Parmesan cheese
- ½ tsp Italian seasoning

- Optional: zucchini noodles (instead of pasta)
Instructions
- Sauté base
Heat oil, sauté garlic until fragrant. - Simmer
Add broth, cauliflower, and broccoli. Cook 10–12 minutes until tender. - Blend (optional for creaminess)
Blend part of the soup for a thicker texture without flour. - Add protein & creaminess
Stir in chicken, almond milk, and cream cheese or yogurt. - Finish
Add Parmesan, seasoning, salt, and pepper. Simmer 3–5 minutes (don’t boil if using yogurt). - Optional noodles
