Pumpkin Cinnamon Rolls

For the Dough:–
- 1 package (2 1/4 tsp) active dry yeast
- 3/4 cup warm milk
- 1/2 cup pumpkin puree
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 3 1/2 – 4 cups all-purpose flour
For the Filling:
- 1/2 cup unsalted butter, softened
- 3/4 cup packed brown sugar
- 1 tbsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
For the Cream Cheese Frosting:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions:-
1. Prepare the Dough:
- In a large bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until foamy.
- Add pumpkin puree, sugar, melted butter, salt, and spices (cinnamon, nutmeg, ginger, cloves). Mix well.
- Gradually add flour, 1 cup at a time, until a soft dough forms.
- Turn the dough onto a floured surface and knead for about 5-7 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
2. Make the Filling:
- In a small bowl, combine the brown sugar, cinnamon, nutmeg, and cloves for the filling.
- Punch down the dough and roll it out on a floured surface into a 16×21 inch rectangle.
- Spread softened butter over the dough, leaving a 1/4 inch border around the edges.
- Sprinkle the filling mixture evenly over the buttered dough.
3. Roll the Dough:
- Tightly roll up the dough starting from the long edge and pinch the seam to seal.
- Cut into 12-15 slices.
4. Arrange in Baking Pan:
- Place the rolls in a greased 9×13 inch baking pan. Cover with a clean towel and let them rise again until doubled in size, about 30-45 minutes.
5. Bake the Rolls:
- Preheat oven to 375°F (190°C).
- Bake rolls in preheated oven until golden brown, about 20-25 minutes.
6. Make the Cream Cheese Frosting:
- In a medium bowl, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Spread frosting over warm rolls before serving.
