Old-Fashioned Keto Chicken and Dumplings
Ingredients:-
For the Chicken:
- 1 lb chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried parsley
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon xanthan gum (optional, for thickening)
For the Dumplings:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
Instructions:-
- Prepare the Chicken:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
- Make the Broth:
- In the same pot, add the chicken broth, heavy cream, thyme, rosemary, parsley, garlic powder, and onion powder. Bring to a simmer over medium heat.
- Thicken the Broth (if using xanthan gum):
- If you want a thicker broth, sprinkle xanthan gum over the simmering broth while whisking constantly. Continue whisking until the broth thickens slightly, about 1-2 minutes.
- Prepare the Dumplings:
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Add melted butter and eggs, mixing until a thick dough forms.
- Form the Dumplings:
- Drop tablespoon-sized portions of the dough into the simmering broth. Cover and let them cook for about 10-12 minutes, until they are cooked through and fluffy.
- Finish the Dish:
- Return the cooked chicken to the pot and gently stir to combine. Taste and adjust seasoning if needed.
- Serve:
- Ladle the chicken and dumplings into bowls and enjoy your keto-friendly comfort food!
