Pan-fried banana custard cake is a simple stovetop dessert made by cooking sliced bananas with a creamy batter in a skillet.

It is similar to a thick banana pancake, but softer and creamier.

It is also similar to a custard cake because the eggs, milk, and flour create a tender texture that is rich but not heavy.

Unlike a regular cake, this recipe does not need an oven.

Unlike classic pancakes, it is cooked as one large cake and sliced into pieces after cooking.

The banana slices are placed in the pan first, then the batter is poured over them. As the cake cooks, the bananas soften and become part of the cake. The bottom turns golden, and the top sets slowly under a lid.

When the cake is flipped, the banana side becomes beautifully browned and slightly caramelized.

Step-by-Step Instructions

Step 1: Prepare the Bananas

Peel the bananas.

Slice them into medium-thick rounds.

Try to keep the slices even so they cook at the same speed.

Set the banana slices aside while you make the batter.

Do not mash the bananas for this recipe. Sliced bananas give the cake a better look and a better texture.

Step 2: Mix the Eggs and Sugar

In a medium mixing bowl, add the eggs and sugar.

Whisk until smooth.

The mixture should look slightly lighter and well combined.

Just whisk until everything is combined.


Step 3: Add Milk, Butter, and Vanilla

Pour in the milk.

Make sure the melted butter is not too hot. If the butter is very hot, it can affect the eggs.

Warm melted butter is fine.

The center should not be very liquid.

Low heat is important because the bottom browns faster than the top.

If the heat is too high, the bananas may burn before the batter cooks through.

Remove the lid carefully.

If the top is still wet and loose, cover it again and cook for 2–3 more minutes.

If the top looks mostly set and the edges pull away from the pan, it is ready to flip.

Shake the pan gently.

Step 10: Flip the Cake

Place a large plate over the skillet.

Hold the plate firmly.

This helps the texture settle.

The cake will slice better after resting.

If you cut it immediately, it may be very soft.

Add powdered sugar, honey, maple syrup, caramel sauce, chocolate drizzle, whipped cream, or ice cream.

This cake is best when served fresh and warm from the pan.
