Fritter mixture
- 1 medium apple, peeled and finely diced
- 100 g nonfat Greek yogurt
- 1 large egg
- 30 g vanilla whey protein powder
- 60 g oat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp vanilla extract
- 1–2 tbsp honey or zero-calorie sweetener
- Pinch of salt
- 1–2 tbsp milk, only if the batter is too thick
Optional glaze
- 30 g powdered sweetener
- 1–2 tsp milk
- Tiny splash of vanilla
👨🍳 Instructions
- Preheat your oven to 180°C / 350°F. Line a baking tray with parchment paper.
- Dice the apple into very small pieces. Pat them dry if they’re particularly juicy.
- In a bowl, whisk together the Greek yogurt, egg, vanilla, and honey/sweetener.
- Add the oat flour, protein powder, baking powder, cinnamon, and salt. Mix until combined.
- Fold in the diced apple. The mixture should be thick and scoopable, not runny.
- Let the mixture sit for 3–5 minutes so the oat flour absorbs some moisture.
- Scoop into 12 small mounds on the baking tray. Slightly flatten the tops.
- Bake for approximately 15–20 minutes, until the edges are golden and the centers are cooked through.
- For a crispier exterior, air-fry at 190°C / 375°F for 2–4 minutes after baking.
- Mix the glaze ingredients and drizzle lightly over the cooled fritter bites.
- Finish with a little cinnamon.
