OVEN FRIED POTATOES & ONIONS

Ingredients:
- 4 medium potatoes (russet or Yukon gold)
- 1 large onion (yellow or red)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme (optional)
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
- Prepare the potatoes: Wash and peel the potatoes. Cut them into 1/2-inch thick slices or wedges, depending on your preference.
- Slice the onion: Peel the onion and slice it into thin rings or wedges.
- Season the potatoes and onions: In a large bowl, toss the potato slices and onion with olive oil, garlic powder, paprika, salt, pepper, and thyme. Ensure the vegetables are evenly coated with the seasoning.
- Arrange on the baking sheet: Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet. Make sure they aren’t overcrowded for the best crispiness.
- Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the potatoes halfway through, until they are golden brown and crispy.
- Garnish and serve: Once done, remove from the oven and sprinkle with fresh parsley if desired. Serve hot as a side dish or a snack.
