OVEN FRIED POTATOES & ONIONS

Ingredients:

  • 4 medium potatoes (russet or Yukon gold)
  • 1 large onion (yellow or red)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the potatoes: Wash and peel the potatoes. Cut them into 1/2-inch thick slices or wedges, depending on your preference.
  3. Slice the onion: Peel the onion and slice it into thin rings or wedges.
  4. Season the potatoes and onions: In a large bowl, toss the potato slices and onion with olive oil, garlic powder, paprika, salt, pepper, and thyme. Ensure the vegetables are evenly coated with the seasoning.
  5. Arrange on the baking sheet: Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet. Make sure they aren’t overcrowded for the best crispiness.
  6. Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the potatoes halfway through, until they are golden brown and crispy.
  7. Garnish and serve: Once done, remove from the oven and sprinkle with fresh parsley if desired. Serve hot as a side dish or a snack.
