One Pot Lasagna Soup

Ingredients:
- 1 lb (450g) ground beef (or turkey for a leaner option)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes (no sugar added)
- 1 can (6 oz) tomato paste
- 4 cups beef broth (or chicken broth)
- 1 cup heavy cream
- 2 cups cauliflower florets (for a low-carb substitute for noodles)
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 1/2 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
- Cook the Meat:
- In a large pot or Dutch oven, heat a bit of olive oil over medium heat.
- Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Add the chopped onion and garlic, cooking for 2-3 minutes until softened and fragrant.
- Add Tomatoes & Seasonings:
- Stir in the diced tomatoes (with juice), tomato paste, Italian seasoning, salt, and pepper.
- Mix everything together and cook for 2-3 minutes, allowing the flavors to combine.
- Simmer the Soup:
- Pour in the beef broth and bring the mixture to a simmer. Let it cook for 5-7 minutes.
- Add the Cauliflower:
- Add the cauliflower florets to the soup and cook until tender, about 8-10 minutes.
- Creamy Texture:
- Stir in the heavy cream and let the soup simmer for another 2-3 minutes to thicken.
- Cheese It Up:
- Lower the heat and stir in the shredded mozzarella and grated Parmesan cheese. Stir until the cheese is melted and the soup is creamy.
- Serve:
- Ladle the soup into bowls and garnish with fresh basil if desired.
