One Pot Lasagna Soup

Ingredients:

  • 1 lb (450g) ground beef (or turkey for a leaner option)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (no sugar added)
  • 1 can (6 oz) tomato paste
  • 4 cups beef broth (or chicken broth)
  • 1 cup heavy cream
  • 2 cups cauliflower florets (for a low-carb substitute for noodles)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Cook the Meat:
    • In a large pot or Dutch oven, heat a bit of olive oil over medium heat.
    • Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
    • Add the chopped onion and garlic, cooking for 2-3 minutes until softened and fragrant.
  2. Add Tomatoes & Seasonings:
    • Stir in the diced tomatoes (with juice), tomato paste, Italian seasoning, salt, and pepper.
    • Mix everything together and cook for 2-3 minutes, allowing the flavors to combine.
  3. Simmer the Soup:
    • Pour in the beef broth and bring the mixture to a simmer. Let it cook for 5-7 minutes.
  4. Add the Cauliflower:
    • Add the cauliflower florets to the soup and cook until tender, about 8-10 minutes.
  5. Creamy Texture:
    • Stir in the heavy cream and let the soup simmer for another 2-3 minutes to thicken.
  6. Cheese It Up:
    • Lower the heat and stir in the shredded mozzarella and grated Parmesan cheese. Stir until the cheese is melted and the soup is creamy.
  7. Serve:
    • Ladle the soup into bowls and garnish with fresh basil if desired.
