- 1/4 cup cornstarch

- 3 cups whole milk
- 4 large egg yolks (lightly beaten)

- 1 teaspoon vanilla extract

- Whipped cream
- Chocolate shavings or curls
Step-by-Step Instructions
Step 1: Make the Pie Crust
- In a large bowl, whisk together the flour and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Roll out the dough on a floured surface and transfer it to a 9-inch pie dish. Trim and crimp the edges.
- Preheat your oven to 375°F (190°C). Prick the bottom of the crust with a fork, line it with parchment paper, and fill it with pie weights or dried beans.
- Bake for 15 minutes, then remove the weights and parchment paper. Bake for another 10 minutes, or until golden brown. Let it cool completely.
Step 2: Prepare the Chocolate Filling
- In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Boil for 1 minute, then remove from heat.
- Gradually whisk about 1 cup of the hot mixture into the beaten egg yolks to temper them.
- Return the egg mixture to the saucepan and cook for 2-3 minutes, stirring constantly, until thickened.
- Remove from heat and stir in the butter and vanilla extract.
Step 3: Assemble the Pie
- Pour the chocolate filling into the cooled pie crust.
- Smooth the top with a spatula and let it cool to room temperature.
- Refrigerate for at least 4 hours, or until set.
