Marinated Mozzarella Balls (keto + low carb)

Ingredients:

  • 8 oz (225g) mini mozzarella balls (ciliegine)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for a bit of heat)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Prepare the marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried basil, dried oregano, salt, pepper, and red pepper flakes (if using).
  2. Marinate the mozzarella balls: Place the mini mozzarella balls in a shallow dish or a jar. Pour the marinade over the mozzarella balls, ensuring they are well coated. Cover the dish or jar and refrigerate for at least 1 hour, or ideally overnight to let the flavors meld.
  3. Serve: Before serving, let the marinated mozzarella balls come to room temperature. Garnish with fresh basil leaves if desired. Serve as a delicious keto-friendly appetizer or snack.
