Low Carb Taco Casserole

Ingredients

  • 1 lb (450 g) ground beef
  • 1 packet taco seasoning, preferably low-carb
  • ½ cup salsa, no added sugar
  • 4 oz (115 g) cream cheese
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack or Mexican-blend cheese
  • ½ cup diced tomatoes
  • ¼ cup diced onion
  • 1 small bell pepper, diced
  • 1–2 tbsp chopped jalapeños, optional
  • ½ cup sour cream, for serving
  • Fresh cilantro and avocado, optional

Instructions

  1. Heat oven to 375°F (190°C).
  2. Brown the ground beef in a skillet. Drain excess grease.
  3. Add taco seasoning, salsa, onion, and bell pepper. Cook for 3–4 minutes.
  4. Stir in the cream cheese until melted and combined.
  5. Transfer to a greased 9×9-inch baking dish.
  6. Sprinkle cheddar and Monterey Jack over the top.
  7. Add diced tomatoes and jalapeños.
  8. Bake for 20–25 minutes, until hot and bubbly.
  9. Top with sour cream, cilantro, and avocado before serving.

Low-carb tip: For a keto-friendly version, use salsa without added sugar and check the taco-seasoning label for hidden starches or sugar. Serve with lettuce, cauliflower rice, or simply enjoy it on its own instead of tortilla chips.
