Lentil Bolognese

1 cup lentils (green or brown)
2 tbsp olive oil
1 onion, finely chopped
2 carrots, diced
2 celery stalks, chopped
2 garlic cloves, minced
14 oz canned crushed tomatoes
1 tsp dried basil
1 tsp dried oregano
3 cups vegetable broth
Salt and pepper to taste

Directions:

  1. Rinse lentils and prepare chopped vegetables.
  2. In a pot, heat olive oil; sauté onion, carrots, and celery for 5 minutes.
  3. Stir in minced garlic and cook 1 minute.
  4. Add lentils, crushed tomatoes, basil, and oregano.
  5. Pour vegetable broth, boil, reduce heat, simmer 30 minutes.
  6. Season with salt and pepper; serve.
