Keto Zucchini Gratin with Yellow Squash


  • 2 medium zucchinis, sliced thinly
  • 2 medium yellow squashes, sliced thinly
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/4 cup almond flour (optional, for extra crispiness)


  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
  2. In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the sliced zucchinis and yellow squashes to the skillet. Season with salt, pepper, and dried thyme. Sauté for 5-7 minutes, until the vegetables are tender.
  4. Transfer half of the sautéed vegetables to the greased baking dish, spreading them evenly. Sprinkle half of the shredded mozzarella and Parmesan cheeses over the vegetables.
  5. Layer the remaining sautéed vegetables on top. Pour the heavy cream evenly over the vegetables.
  6. Sprinkle the remaining shredded mozzarella and Parmesan cheeses on top. If desired, sprinkle almond flour over the cheese for extra crispiness.
  7. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.
