Keto Zucchini Fritters

Ingredients:
- 2 medium zucchini (grated and squeezed to remove moisture)
- 2 large eggs
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley (optional)
- 1 clove garlic (minced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil or avocado oil (for frying)
Instructions:
- Prepare the Zucchini:
Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much water as possible to ensure crispy fritters. - Mix the Ingredients:
In a bowl, combine the grated zucchini, eggs, almond flour, Parmesan cheese, garlic, salt, and pepper. Mix well to form a batter. - Heat the Pan:
Heat the olive oil in a non-stick skillet over medium heat. - Form the Fritters:
Scoop about 2 tablespoons of the mixture for each fritter and shape it into a small patty. Place the fritters in the skillet. - Cook the Fritters:
