Keto Zucchini Fritters

Ingredients:

  • 2 medium zucchini (grated and squeezed to remove moisture)
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (optional)
  • 1 clove garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or avocado oil (for frying)

Instructions:

  1. Prepare the Zucchini:
    Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much water as possible to ensure crispy fritters.
  2. Mix the Ingredients:
    In a bowl, combine the grated zucchini, eggs, almond flour, Parmesan cheese, garlic, salt, and pepper. Mix well to form a batter.
  3. Heat the Pan:
    Heat the olive oil in a non-stick skillet over medium heat.
  4. Form the Fritters:
    Scoop about 2 tablespoons of the mixture for each fritter and shape it into a small patty. Place the fritters in the skillet.
  5. Cook the Fritters:
    Fry for 2-3 minutes on each side until golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.
  6. Serve and Enjoy:
    Serve hot with a dollop of sour cream or your favorite keto-friendly dip.

Tips:

  • Add a pinch of chili flakes for a spicy kick.
  • Pair with a simple side salad for a light, keto-friendly meal.
