Keto Yorkshire Puddings
Ingredients
- 3 large eggs
- 1/2 cup almond flour (finely ground)
- 1/4 cup heavy cream
- 1/4 cup water
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 tbsp butter or beef drippings (for the pan)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Place a muffin tin with 6 cups inside the oven to heat.
- Prepare the Batter:
- In a mixing bowl, beat the eggs until they are frothy.
- Add the almond flour, heavy cream, water, salt, and baking powder. Mix well until the batter is smooth and well combined. Let the batter rest for about 10 minutes to thicken slightly.
- Heat the Fat:
- Once the oven is preheated, carefully remove the hot muffin tin. Add a small amount of butter or beef drippings (about 1/2 teaspoon per cup) into each muffin cup. The fat should sizzle when it hits the hot tin.
- Add the Batter:
- Quickly pour the batter into the muffin cups, filling each one about halfway. The batter should sizzle and bubble slightly as it hits the hot fat.
- Bake:
- Return the muffin tin to the oven and bake for 15-20 minutes or until the puddings have puffed up and turned golden brown. Avoid opening the oven door during the baking process, as this can cause the puddings to deflate.
- Serve:
- Once baked, remove the Yorkshire puddings from the oven. Serve immediately while they are still puffed up and crispy.
