Keto Taco Rolls

Ingredients:

  • 1 lb ground beef (or chicken, turkey, or pork)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1/2 cup water or beef broth
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 8 large lettuce leaves (like romaine or butter lettuce)
  • Sour cream, salsa, and guacamole for serving

Instructions:

  1. Cook the Meat: Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, cooking until softened. Add your ground meat and cook until browned. Drain any excess fat.
  2. Season the Meat: Add taco seasoning and water (or broth), stir well. Simmer for 5-7 minutes until the flavors meld and the mixture thickens.
  3. Assemble the Rolls: Lay out the lettuce leaves, add a spoonful of the seasoned meat, and top with shredded cheese.
  4. Roll and Serve: Carefully roll up the lettuce leaves, making sure the filling stays inside. Secure with a toothpick if necessary.
  5. Serve: Top with sour cream, salsa, and guacamole for that extra kick!
