Keto Taco Rolls
Ingredients:
- 1 lb ground beef (or chicken, turkey, or pork)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1/2 cup water or beef broth
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 8 large lettuce leaves (like romaine or butter lettuce)
- Sour cream, salsa, and guacamole for serving
Instructions:
- Cook the Meat: Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, cooking until softened. Add your ground meat and cook until browned. Drain any excess fat.
- Season the Meat: Add taco seasoning and water (or broth), stir well. Simmer for 5-7 minutes until the flavors meld and the mixture thickens.
- Assemble the Rolls: Lay out the lettuce leaves, add a spoonful of the seasoned meat, and top with shredded cheese.
- Roll and Serve: Carefully roll up the lettuce leaves, making sure the filling stays inside. Secure with a toothpick if necessary.
- Serve: Top with sour cream, salsa, and guacamole for that extra kick!
