Ingredients

For the base:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup peanut butter or almond butter (no sugar added)
  • 1/4 cup butter, melted
  • 1/4 cup sugar-free maple syrup or keto-friendly sweetener
  • 1 teaspoon vanilla extract

For the topping:

  • 1/2 cup sugar-free chocolate chips (Lily’s or a similar brand)
  • 1/4 cup sugar-free butterscotch chips (optional, or you can use extra chocolate chips)
  • 1 tablespoon coconut oil

Instructions

  1. Prepare the base:
    • In a large bowl, mix the almond flour, coconut flour, peanut butter, melted butter, sugar-free maple syrup, and vanilla extract until well combined.
    • Press the mixture evenly into the bottom of an 8×8-inch pan lined with parchment paper.
  2. Make the topping:
    • In a microwave-safe bowl, combine the sugar-free chocolate chips, butterscotch chips, and coconut oil. Microwave in 20-30 second intervals, stirring between each, until melted and smooth.
    • Pour the melted chocolate mixture over the base layer in the pan, spreading it evenly.
  3. Chill:
    • Place the pan in the refrigerator for at least 1-2 hours, or until the bars are firm and the chocolate topping has set.
  4. Serve:
    • Once set, cut into squares and enjoy! Store any leftovers in an airtight container in the fridge.
