Since traditional crescent dough isn’t keto, this uses fathead dough (the best low-carb substitute).
🧀 Ingredients
For Keto Dough (Fathead Dough)
- 1½ cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 cup almond flour
- 1 large egg
- ½ tsp baking powder
- Pinch of salt
For Filling
- 2 cups fresh spinach (chopped)
- ½ cup cream cheese (softened)
- ½ cup shredded mozzarella or cheddar
- 2 cloves garlic (minced)
- 1 tbsp olive oil or butter
- Salt & black pepper to taste
- Optional: chili flakes or Italian seasoning
👩🍳 Instructions
1. Make the Filling
- Heat olive oil in a pan.
- Sauté garlic for 30 seconds.
- Add spinach and cook until wilted.
- Mix in cream cheese and shredded cheese.
- Season with salt, pepper, and optional spices.
- Let cool.
2. Make the Dough
- Microwave mozzarella + cream cheese for 40–60 seconds until melted.
- Stir until smooth.
- Add almond flour, egg, baking powder, and salt.
- Mix into a soft dough.
3. Shape the Rolls
- Roll dough between parchment paper into a circle.
- Cut into triangle slices (like pizza).
- Add spinach filling at the wide end.
- Roll into crescent shape.
4. Bake
- Preheat oven to 375°F (190°C).
- Place rolls on baking tray lined with parchment paper.
- Bake for 12–15 minutes until golden brown.
