Keto Pumpkin Poke Cake
Ingredients
For the Cake:
- 1 cup almond flour
- 1/2 cup coconut flour
- 1 cup erythritol or preferred keto-friendly sweetener
- 1 tablespoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup unsweetened almond milk (or coconut milk)
- 1/2 cup melted butter or coconut oil
- 1 teaspoon vanilla extract
For the Pudding Filling:
- 1 cup heavy whipping cream
- 1/4 cup powdered erythritol
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
For Topping:
- Whipped cream (sugar-free)
- Cinnamon for sprinkling
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- Make the Cake:
- In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, pumpkin pie spice, and salt.
- In another bowl, combine the eggs, pumpkin puree, almond milk, melted butter, and vanilla extract. Mix well until smooth.
- Gradually add the wet ingredients to the dry ingredients and stir until fully combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake the Cake: Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Make the Pudding Filling:
- In a medium bowl, beat the heavy whipping cream until soft peaks form. Gradually add the powdered erythritol, vanilla extract, and pumpkin pie spice. Continue to beat until stiff peaks form.
- Poke the Cake: Once the cake is completely cool, use a fork or the handle of a wooden spoon to poke holes all over the top of the cake, about 1 inch apart.
- Fill the Cake: Spread the whipped cream mixture evenly over the top of the cake, making sure it fills the holes.
- Chill and Serve: Refrigerate the cake for at least 1-2 hours to allow the flavors to meld. Before serving, you can top it with additional whipped cream and a sprinkle of cinnamon.
