Keto Pumpkin Poke Cake

Ingredients

For the Cake:

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 cup erythritol or preferred keto-friendly sweetener
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup unsweetened almond milk (or coconut milk)
  • 1/2 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract

For the Pudding Filling:

  • 1 cup heavy whipping cream
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice

For Topping:

  • Whipped cream (sugar-free)
  • Cinnamon for sprinkling

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. Make the Cake:
    • In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, pumpkin pie spice, and salt.
    • In another bowl, combine the eggs, pumpkin puree, almond milk, melted butter, and vanilla extract. Mix well until smooth.
    • Gradually add the wet ingredients to the dry ingredients and stir until fully combined.
    • Pour the batter into the prepared baking dish and smooth the top with a spatula.
  3. Bake the Cake: Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  4. Make the Pudding Filling:
    • In a medium bowl, beat the heavy whipping cream until soft peaks form. Gradually add the powdered erythritol, vanilla extract, and pumpkin pie spice. Continue to beat until stiff peaks form.
  5. Poke the Cake: Once the cake is completely cool, use a fork or the handle of a wooden spoon to poke holes all over the top of the cake, about 1 inch apart.
  6. Fill the Cake: Spread the whipped cream mixture evenly over the top of the cake, making sure it fills the holes.
  7. Chill and Serve: Refrigerate the cake for at least 1-2 hours to allow the flavors to meld. Before serving, you can top it with additional whipped cream and a sprinkle of cinnamon.
